Drunken White Clams
This has a light flavor that pairs well with a cup of red wine and freshly made bread. The wine enhances the clams mild flavor, allowing it to blend well with the garlic butter sauce!

Ingredients
- 12 oz Linguine or Spaghetti
- 3 tb butter
- 3 cloves garlic, minced
- ¼ tsp Red Pepper Flakes
- ½ c White Wine
- ½ c Chicken Broth
- ½ tsp Salt
- ½ tsp Lemon Pepper
- 2 lbs littleneck or manila clams, cleaned and rinsed
- 2 tb chopped fresh Basil
- Half a lemon, squeezed
Directions:
- In a large pot, cook pasta according to packaging then drain and set aside.
- Melt butter in a large skillet over medium high heat, while pasta is cooking. Add in garlic and red pepper flakes once butter has melted.
- Stirring frequently, cook until garlic is fragrant about 1-2 minutes.
- Add in white wine, simmer for 10 more minutes to allow alcohol to evaporate out,
- Stir in chicken broth and season with salt and lemon pepper.
- Next, mix in clams. Cover and cook until the clams have opened, about 5-8 minutes. If not all clams have opened, discard them.
- Fold in cooked pasta, 1 tb of chopped basil and mix until well coated in sauce.
- Garnish with the other 1 tb of chopped basil, squeeze half of lemon over pasta and serve with fresh bread!

When hunting for juicy clams there are a few hints and tricks you can do to ensure the easiest way of getting your hands on some fresh clams!
First, know when to go! The best time to go clam digging is when there is low tide. You want to go about an hour or so before low tide for the best results, this is usually really early in the morning! Also, most places have specific seasons when you can and cannot clam dig. So be sure you know when you can go!
Next, get the best equipment to ensure easy catching. You need a trusty shovel, a bucket to keep your freshly caught treasures and a long rake to dig deep into the sand sometimes people take pitch forks instead, they both work great for doing the job!
Something to keep in mind before going, you’ll need to do a little research! Find out the beast areas to go clam digging. Also become familiar with any regulations that area has. It’s important to have the proper permits and know what rules apply to you. Most places have a size requirement. If the clam is too small and you get caught keeping the little ones you could be slapped with an unwanted fine. So, it’s always nice to do a little research before hitting the road!
Once you’ve obtained all the necessary equipment, permits and you know where you’re going you’ll need to know what to look for when hunting those tricky critters! To find clams look for small holes in the sand. These are normally what the clam uses to breathe through. To make sure you found the right hole, jump or stomp near the hole and see if a tiny amount of water spouts out. If it does, there’s a good chance a clam is beneath the hole! Once you have found a hole and know there’s a clam beneath, you will need to rake or dig about 6 to 8 inches below to get to the clam. Once you have him, measure to make sure it’s the proper size. If it is toss it in your bucket and keep searching!
Clam digging can be a lot of fun, but remember its also a lot of hard work. And don’t expect to catch a lot the first time around, it takes a lot of experience and a ton of time to know what signs to look for and how far down to dig once you’ve found a spot with a clam.
